Emily's Tiramisu

5 eggs
5 tbsp sugar
500g mascarpone cheese
2 tbsp vanilla extract
Italian Savoiardi lady finger cookies
1 cup espresso coffee
3 tbsp Kahlua
Dark chocolate (I used 70% cocoa dark chocolate)

The recipe:
1. Separate the egg whites and yolks in separate bowls. Whisk whites to stiff peaks.
2. Add sugar and vanilla extract to yolks and whisk until creamy.
3. Add mascarpone cheese to the yolks and whisk until smooth.
4. Fold the whites into the cheese mixture.
5. In a separate wide-mouthed dish, combine espresso and Kahlua.
6. Quickly dip one side of each cookie into the espresso mixture (keep the center dry!) and arrange tightly as a layer in the cake pan.
7. Spread 1/2 the cheese mixture smoothly over the cookie layer.
8. Repeat another layer of cookies, followed by the rest of the cheese.
9. Refrigerate for 3-4 hours.
10. Sprinkle with chocolate shavings before serving.
