Emily's Mango Pudding

Mangoes can be substituted with bananas or apricots for this recipe.

2 eggs, separated into whites and yolks
2 tbsp custard powder
2 tbsp corn starch
3-1/2 tbsp gelatin powder
1/2 can evaporated milk
3/4 cup sugar
2 mangoes, finely diced
1 tsp mango extract

The recipe:
1. Beat egg whites to stiff peaks.
2. Beat yolks separately.
3. Mix gelatin into 4-5 tbsp cold water.
4. Boil 1 cup water at high heat and add gelatin mixture and sugar. When dissolved, turn heat to medium.
5. Mix corn starch and custard powder into 4-5 tbsp cold water.
6. Slowly add corn starch/custard powder mixture to boiling mixture.
7. Add evaporated milk, mango extract, mangoes, and egg yolks.
8. Turn down heat to low, and slowly add egg whites and mix until smooth.
9. Pour into lightly greased platter and cool to set.
10. Drizzle with evaporated milk before serving.
