Emily's "Posole"


I put this in quotations, because this is my personal version of posole inspired by a delicious vegetarian posole I had at a Mexican restaurant. This recipe contains no meat, but you can always add chicken or pork to it. Also, it took a long time for me to finally get FTP set up on my MacBook since my PC died, so this recipe might not be exactly as I did it...

Ingredients:
2 cloves garlic, minced
1 onion, diced
1/2 cup water
3 carrots, sliced
3 cups chicken broth
1 can of hominy
1 can of crushed tomatoes
1 red bell pepper, chopped
1/2 tsp cumin
1 tsp chili flakes
Few shakes of Frank's Red Hot
salt, pepper, olive oil
cilantro for garnish

The recipe:
1. In a large pot, caramelize the onions, garlic, and carrots in olive oil.
2. Add chicken broth, and then throw everything else in, except for the Frank's Red Hot and cilantro.
3. Simmer for at least 20 minutes, then add Frank's Red Hot to taste, and garnish with cilantro.
