Emily's Cumin and Fennel Marlin Fillets

My parents bought some marlin filets, so I used that. But I think this would taste great with tuna filets also.

Ingredients:
3 small marlin fillets
1 tbsp cumin
1 tbsp fennel seed
1 tbsp cayenne pepper
1 tbsp sugar
1 tsp salt
2 tbsp extra-virgin olive oil
3 tbsp heavy cream
2 tbsp flour

The recipe:
1. Combine cumin, fennel seed, cayenne pepper, sugar, and salt. Grind finely.
2. Rub spice mixture to coat the marlin fillets
3. Fry the fillets in olive oil until browned on both sides and thoroughly cooked.
4. Remove fillets from the pan to plate.
5. Add cream and flour to pan to make sauce with the remains from frying the fish. Result should be thick and chunky, and small in amount.
6. Place small amount of sauce to top of each fillet.

Enjoy!
